Zucchini patties

Ingredients
  

  • 3 tbsp rye flour
  • 2 tbsp wheat flour
  • 1 mid to large sized zucchini
  • 2 small carrots
  • 1 onion
  • 1 small garlic clove
  • 2 tbsp olive oil
  • 2 tsp curry powder
  • 1 1/2 tsp salt
  • 1 tsp pepper
  • 1/2 tsp nutmeg

Instructions
 

  • Wash and peel the veggies if they are not organic.
  • Grate the zucchini and the carrots in a big bowl.
  • Slice the onion and the garlic in very small pieces and add them into the bowl.
  • Add the spices and the olive oil.
  • Mix everything with a tablespoon or with your hands.
  • Add the half of the flour and mix everything again. If you think the patty dough is already sticky enough you don’t need to add the rest of the flour. Otherwise keep adding until the consistency is great.
  • Take a tablespoon full of the dough into your hand. Form it to a ball first and then flatten it out. Put it into a pre heated non sticky pan to fry. If it keeps sticking to the ground add a little bit of olive oil. Fry the patties on low heat for 4 minutes on both sides until they are golden brown.
  • Enjoy them on a burger, as a side dish or simply with a dip. They are also great together with apple sauce.
